The first time I tried quinoa salad was at my graduation lunch that my school held. Prior to this I had never heard of quinoa but instantly became something I incorporated into lots of my meals. However my favorite meal with quinoa is a quinoa salad and I know people make it many different ways but this is how I make mine:
The ingredients I use:
I cook a bag of quinoa and chop the vegetables into small cubes and mix together in a bowl. Feta in the salad is my favorite part!
As for the dressing I just drizzle a little bit of balsamic vinegar, olive oil and lemon juice. I don’t specifically measure, I just eye it according to how much quinoa I have cooked and taste.
This salad is perfect for summer and just gives something a little different than a traditional salad for lunch.
