I hope you have been enjoying your week and it has been very productive and happy for you. Today I had a day off and I found it going by very quickly as all morning I fell into the YouTube vortex. Honestly don’t understand where the time goes when I start watching videos. Sooo, I decided to get off my butt and make sure the day didn’t disappear without me feeling some sort of productive which has now led me to these few yummy treats I baked and fallen in love with.
I will be sharing two different treats in this one post so it will be a little different to my usual recipe posts.
What I made were No Bake nutty bars where the credit of these go to Poppy Deyes which if you watch YouTube and have come across Pointless Blog, Poppy is his sister and friend of Zoella who are all a few of my favorites YouTubers. The second recipe are a healthier version of oatmeal chocolate chip cookies that I found on pinterest. Love pinterest!
They are both easy and quick to make and the results are always yummy. The bars I have made before as I take them to work to get healthy fats and protein in my diet, but they taste like a yummy treat.
The cookies are not made with any added sugar which I really like. I normally avoid using butter in my recipes but this one only called for 2 tablespoons so I made an exception.

As you can see I had some little furry friends keeping me company, even though Tamber (the dog) was probably just looking for crumbs as usual.
To make the nutty no bake bars, you will need:
1/4 cup peanut butter, 1 and 1/4 cup honey, 1 cup almonds, I handful of dried cranberries, 1 and 1/2 cuts of rolled oats.
Set the oven to 180 degrees, toast the almonds and oats for 15 minutes, this is optional but it does give it a better taste. On the stove heat up the peanut butter and honey. Mix all the ingredients into a bowl and then in an 8×8 pan spread the mixture evenly and push down really hard. Important to do this so the bar isn’t too crumbly that you can no longer call it a bar but more like trail mix! (that was my first try) Keep in the fridge for 20 minutes before cutting and store in the fridge.
To make the oatmeal chocolate chip cookies, you will need:
I cup oats, 3/4 cup flour, 1 and 1/2 teaspoons baking powder, 1 and a 1/2 cinnamon, 1/2 teaspoon sea salt, 2 tablespoons butter, 1 teaspoon vanilla, 1 large egg, 1/2 cup honey, desired amount of chocolate chips
Set the oven to 325 degrees. Whisk together the wet ingredients in a separate bowl from the dry ingredients. Once the dry ingredients are combined and the wet ingredients are mixed together, combine them and stir lightly. Put mixture into the freezer for 15 minutes and then using your hands form the dough into small balls and distribute them on a baking sheet with parchment paper. Bake in the oven for 13 minutes.
