Food blog: Quinoa, Broccoli, Chick Pea Burgers

I first tried making these burgers in my first year of university and they were delicious. I am vegetarian however still crave a burger as a meal and these were not the typical veggie burgers however satisfied the craving and was worth making again.

This recipe made approximately 10 burgers.

Ingredients:

3 cups broccoli florets                                                                                                                                      1 15oz can of chick peas, drained and rinsed                                                                                            1 cup cooked quinoa                                                                                                                                          1 tablespoon of mustard                                                                                                                              4-6 tablespoon of flour                                                                                                                                   2 tablespoons of garlic powder                                                                                                                salt and pepper to taste

Boil broccoli until tender and mix together with quinoa and chickpeas until a dough is formed and all ingredients are mixed well together. Next add the mustard, flour, garlic, salt and pepper and stir together. Now using your hands, form the dough into burgers. Put into the fridge for one hour to chill. Next add a little olive oil to a frying pan and cook each burger both sides until light brown.

I decided to keep this meal as healthy as I could and to cut the carbs I used large romaine leafs as the roll and cut up tomato and had sliced pickles. It is so delicious! Homemade sweet potato fries would be excellent with these also. 🙂
