Chocolate Chip Banana Bread

I am back into baking everyone. I am thoroughly enjoying this week off and spending it in Halifax and have been spending time in my friends kitchen. Here is what we made today:


You will need:

2 large eggs

2 teaspoons of vanilla extract

2 1/4 cups of flour

1 1/2 cups of sugar

1 teaspoon of baking soda

I teaspoon of salt

1 cup of almond milk

2 cups of frozen banana (slice into small chunks and keep in frozen)

1 cup of softened butter



Preheat the oven to 350 degrees. Mix all the wet ingredients in one bowl. Mix the dry ingredients in another bowl. Then mix the wet and dry ingredients together. We folded in the amount of semi sweet chocolate chips we desired.  Stir until creamy and smooth. We used foil loaf tins that can be thrown away after use, and just halved the batter into two loaf trays then baked in the oven for 1 hour. Test if done by sticking a fork in the center and if the fork comes out clean, then it is cooked all the way through. Remove from the loaf tins and let sit to cool.








They are so delicious! We almost finished an entire loaf pan just today between the two of us.
