I enjoy soups all year round and unless you are not like me, I think you will also enjoy making this soup for either your lunch or dinner. I actually came across this recipe from a youtube channel by Kalel. She follows a vegan lifestyle and therefore this soup does not require any animal products and I can confirm that it is delicious!
Spicy Sweet Potato Stew
Here are the ingredients you will need:
- 2 cups of vegetable broth
- 1 1/2 cups of water
- I can of diced tomatoes
- 1 large sweet potato
- 2 carrots chopped into chunks
- 1 cup of chopped onion
- 1 tablespoon of minced garlic
- 1 cup of chopped red bell pepper
- I can of black beans
- 1 cup of red lentils (I did not use this but the recipe recommends)
- 2 tablespoons of brown sugar
- 1 tablespoon of vinegar
- a few drop of lemon juice
- a pinch of cayenne pepper
- black pepper
In a large pot, boil the vegetable broth, water, diced tomatoes, carrots and 1/2 of the sweet potato. Cook for about 15 minutes.
You can do this step while the above step is cooking. In a frying pan, fry the onion, garlic and red pepper for about 10 minutes.
Once the ingredients have cooked in the pot, put into a blender and blend until smooth. You can add water to dilute or reach your desired consistency.
Next, combine the blended ingredients and the frying pan ingredients back into the same pot.
Cook on low heat. Add the brown sugar, vinegar, lemon juice, cayenne and black pepper. Then next add the leftover sweet potato chunks, black beans and red lentils.
Cook on low for 1 hour.
