Choco-Pumpkin Loaf


Hi again,

You must have expected for a pumpkin recipe to make its way onto my blog. If I was to create a Fall bucket list (which I may just do), you know baking with pumpkin would definitely be on that list and that is just what I have done.

I found this recipe on Pinterest and it is vegan if you add vegan chocolate chips but even if you are not vegan, it is a guilt free loaf as there are many alternative healthy ingredients incorporated.

So here it goes:


Preheat your oven to 350 degrees. Spray a non-stick loaf pan. (9 x 5)

Put the following ingredients into a mixing bowl or blender and mix all together;


2 cups old fashioned oats

1/2 cup maple syrup

1 15 oz can of puree pumpkin

1 teaspoon of baking soda

1 teaspoon of pumpkin pie spice or cinnamon

2 large eggs

I added a few handfuls of chocolate chips in and hand mixed them into the batter and then poured the batter into the loaf tin, finishing with a few chocolate chips sprinkled on top.

Bake for 30 minutes. 

And mmm mmm good!
